head chef handI have a very good experience in the catering industry. After finishing high school profile Technician Nutrition for over 10 years I worked in the catering sector. I’m currently working on the position of cook in the hotel restaurant a la carte Dune 5-star Hotel. My main responsibilities is the preparation of dishes as a head chef according to a recipe. Special features menu is seasonal, regional product, freshness, return to tradition. For more than nine years I worked in a seaside restaurant in Kolobrzeg, Poland. For over three years I worked   on position of Chef there. I was responsible for making a menu card – activities related to warehouse premises – business contacts with representatives of suppliers – laying seasonal menu – keeping complete documentation related to HACCP – supervising the work of younger chefs, help kitchen and waiters – clean-up work in the kitchen. The main speciality of the kitchen dishes were related to the maritime region or fish. But the wide range of restaurants allowed me to meet a lot of dishes and methods of their preparation. Learn and apply in practice the culinary techniques such sous vide or confit. An important element in the kitchen were products of own production. First of all, the traditional ice cream and desserts based on them. I carried out the operations coordinator of a team of the restaurant and I was a restaurant manager. At that time, I was responsible for, among other things: recruit and training new staff – marketing activities to a restaurant – supervision of the restaurant staff – contacts with the guests of the restaurant – the promotion of the premises worked as a bartender, waiter., Barista. I have completed a bartender course of the first degree.
